Blueberry Cabbage Smoothie {Gluten free, Vegan and sugar free}

Most of the time, lately, I’m struggling to believe that it’s December. Of course the calendar says it, there are many Christmas decorations in stores, I even saw the pictures of the first snowfall that my family and friends received earlier this week in New York.

I saw some beautiful fresh organic blueberries in the market earlier in the week and I had to have them. I had no particular idea in mind of what I wanted to do, but rather a lot.

A smoothie was the first one that came to mind once I got home, with some of the beautiful cabbages I bought same day.

This smoothie has an incredible flavor with a bit of blueberry acidity, as well as the acidity that you would get when adding yogurt to a smoothie.

The subtle sweetness of the banana and the dates make up for it very well and the touch of cinnamon is so warm and pleasant.

As a self-proclaimed Christmas addict, I especially liked the red spots of blueberries paired with the green of the kale. Very appropriate to help me get into the festive atmosphere and perfect for a post-run breakfast!

Ingredient

Serves 1

  • 2 tablespoons of coconut cream *
  • 1 1/2 cups of coconut water *
  • 2 dates Medjool, or other sweetener of your choice
  • 1 large bunch of kale, stems removed and leaves torn
  • 1 organic banana, frozen
  • 1 cup of fresh organic whole blueberries
  • 1/2 teaspoon ground cinnamon

Add all ingredients to your high-speed blender. Mix until smooth and creamy. To serve.

You can also simply choose 1 1/2 cups of any non-dairy milk without sugar of your choice, or simply coconut water. This is what I had on hand in the refrigerator and I wanted to use it.
