- 4 cloves of garlic
- 1/3 cup of Brazil nuts (selenium)
- 1/3 cup of sunflower seeds (cysteine)
- 1/3 cup of pumpkin seeds (zinc, magnesium)
- 2 cups of fresh cilantro packed [also] (vitamin A)
- 4 tablespoons of lemon juice (vitamin C)
- 2 extra extra virgin olive oil
- 2 teaspoon dull powder / 2/3 cup flaxseed oil / Sea salt to taste
- Process the coriander, garlic, nuts, seeds, dulse, olive oil and lemon juice in a blender until finely chopped.
- Then add flax oil and a pinch of sea salt and mix at low speed (do not heat flax oil) until the mixture is mixed into a paste.
- If possible, store in the refrigerator in dark glass jar.
This pesto freezes well, so buy coriander in season and fill enough pots to go all year round. The coriander will turn dark green/brown within 4-5 days if you want to keep it super fresh, keep a small supply in the fridge and freeze the rest to use if needed.
