Pumpkin Pie Green Smoothie Recipe (Vegan)
Pumpkin pie is a favorite treatment of autumn. Now it can be a healthy smoothie full of vitamins, minerals, and antioxidants! This recipe is a perfect meal replacement shake for when you are on the move.
I found that the cooked and cooled pumpkin, or the organic cane squash had more flavor than the raw pumpkin. If you really want to use raw pumpkin, I would use about 1 cup and add about 2 tablespoons of carrot juice to help highlight the flavor.
- 3 tablespoons cashews
- 1/2 cup pure canned pumpkin
- 1 cup fresh or frozen mango
- 8 ounces (236 ml) unsweetened almond milk*
- 2 cups baby spinach
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
*Add 2 ounces of water if your smoothie is too thick.
Begin by adding the liquid to your blender, followed by the soft fruit. Add the greens to your blender at the end. Mix at high temperature for 30 seconds or until the shake is creamy.
